Emmeline was born in Nashville, TN and raised in Maryville, TN from the time she was two years old. She is the youngest sibling of two older brothers. Growing up, her parents emphasized the importance of travel and being culturally diverse by giving her the opportunity to travel to several places all around the world. This experience encouraged her love for food, hiking, and embarking on exploratative adventures.
After graduating from Maryville High School in 2006, she went on to graduate from Maryville College with a Bachelor of Arts in Business & Organizational Management. Upon graduation, she was able to gain valuable leadership experience by working in accounting for three years for Calloway Oil Company. While this experience was economically gratifying, her career was lacking the passion she was looking for.
Her whole life she had an extreme interest in nutrition and living a healthy lifestyle, which led Emmeline to search for a career in which she could share her interests while helping others. While attending Maryville College, she worked as a fitness instructor and consultant at Curves where she first gained experience in nutritional counseling and coaching. This was where she realized she had finally found her spark. After consulting with a nutritional counselor and speaking with a Registered Dietitian in her area, Emmeline was determined that this was the job she had been looking for. Although the process seemed daunting, she decided the hard work would be worth the end goal of embarking on a career of her dreams, being a Registered Dietitian.
To start on the path, Emmeline quit her job in accounting and started taking science classes at Pellissippi State Community College while beginning to work part time as an office manager. After taking Nutrition 101, she knew she had made the right decision and was exactly where she needed to be. She started her first year at University of Tennessee Knoxville in the Fall of 2014 as a Junior in the Nutrition major. She has supplemented her learning by working as an intern at East TN Children's Hospital GI for Kids as well as volunteering for other nutrition related work experiences. She will graduate in May of 2016 with a Bachelor of Science in Nutrition and is excited to begin the process of applying for dietetic internships for the upcoming fall.
