My name is Emmeline Huddleston and I am a senior student of Nutrition at The University of TN Knoxville.  I am applying for the dietetic internship program in my quest to become a Registered Dietitian.  I am confident that I am fully prepared to take on this role and would be an excellent attribute to your program.  

 

From my background in businesss and accounting, I have attained leadership skills and am fully comfortable giving and receiving direction as needed.  Throughout my time working in a professional office, I have been able to combine my love of nutrition with my work by developing bimonthly health tips in email form for the office to enjoy as well as encouraging office wellness programs.  This background has also proven beneficial to me in that I have already worked full time and am aware that the dedication I put into this role directly correlates with how well I am able to succeed in my career.  I am fully committed to learn as much as I can in order to make my dream a reality.

 

My love of nutrition has been organically engrained in me for as long as I can remember.  When I began as a fitness instructor and nutrition consultant at Curves, I was able to glimpse the degree to which nutrition education can mold the lives of others and my interest has been sparked ever since.  Teaching nutrition to preschoolers as a Health Happens Educator has reinforced my desire to work as a leader in nutrition education.  My nutrition curriculum from University of Tennessee in classes such as Vitamins and Minerals, Energy Metabolism, Clinical Nutrition, and Nutritional Counseling has laid a foundation for me to start my career in the field of dietetics.  By working as an intern at East TN Children's Hospital GI for Kids, I have been able to witness and participate in the nutritional care process first hand by working with WIC and children diagnosed with GI disorders.  I have also been supplementing my nutrition classes with experiences such as shadowing and interning for Registered Dietitians in the fields of Geriatrics, Nutritional Education, and Foodservice in order to apply my knowledge to real life occupations.  

 

As my interest in the field of nutrition continues to grow wih consistent learning, I look forward to narrowing down my field of choice upon completion of a dietetic internship.  In the medical arena, much has yet to be discovered.  The power of health and nutrition is finally being recognized as a means of prevention to many diseases and chronic illnesses.   I am excited to become a part of this team and to contribute my services to the field of nutrition therapy and health promotion.
